 
All coffees we produce are either
produced from our farms or bought by
us from farmers who we have been
monitoring their coffees and dealing with them for many generations and having
them to find us beside them whenever they needed us got them
to feel that they are part of our success and family .
The farmers we deal
with are known to produce the finest coffees and being monitored and
assisted consequently to help them out to have them feel secure to focus
on their coffees, to produce coffees at peace of mind to eliminate the rush of harvesting
early before the cherries are ripe, which is being the major problem with
Yemen coffees and many coffee importers are complaining about it. With our
consistent monitoring and advices we managed to produce the finest coffees
available in Yemen. Usually our coffee is pre-sold ahead of time and
our production is in increase through out the years. We would like to take the
chance and thank all our people, and our very loyal farmers and ofcource
you for their supports, trust and efforts to help us produce (LET US SAY THE
FINEST COFFEE IN THE WORLD).
 
This
coffee is a dry-processed natural coffee, and the roast color
will be uneven from bean to bean, but the coffee is judged by the "cup quality," not visual
appearances.
The
process of our coffees is done the same way done 100s of years ago,
dry-processed. Ripe coffee cherries are dried on rooftops, husked by
millstone, and cleaned 100% by hand. We use up to 350 well trained workers to
perform clean ups 3 or 4 times or even more if necessary to insure quality
and sometimes we hire more personal to speedup the process to meet the
time of delivery required by our valuable customers.

In the case
of Mattari (this coffee has many factors
could effect the beans), so always we do our best to take out the broken beans but sometimes
when loading and unloading the coffee bags the beans are very fragile,
they get
broken easily ( NOTE; to get 18 tons cleaned you need around 25 - 26 tons uncleaned
coffee some producers mix this coffee with less cheaper coffee
to fulfill the difference).

Yemen coffee is grown almost exactly
as it was hundreds of years ago, without the use of synthetic fertilizers,
pesticides or herbicides. In addition all processes are done on our
coffees with the absence of the machine and done by hand. Although our
coffees are 100% ORGANIC but not certified.
 
To follow up
with our coffee quality from season to season over the years, we
established a DATA RECORD
for the passed 3years and compare the results of
our new crops with the results of the past 3years. These results are
collected from our expert cupping test and from the cupping tests and the
feedbacks of our customers in The United States, Europe and Japan. By
taking all results, the average will enable us to have a good look of
where does our new crops stand from the quality of the past crops, then we
can give our recommendations And rating our new coffees based on the
previous quality already discovered by our clients. Again we are the only

Botanical
varieties:
Virtually
all Yemen coffee comes from ancient, "heirloom" varieties of
coffee arabica first naturalized hundreds of years ago. The
two most famous are Ismaili, which produces small, round,
pea-like beans, and Mattari, which produces small, rounded,
